When life hands you lemons, don’t just make any kind of lemonade. Make pineapple lemonade.
This pineapple lemonade recipe is a flavorful twist on traditional lemonade; a refreshing combination of tangy, slightly-sweet, tropical goodness with a kick of mint.
2 cups sugar
2 cups water
2 cups unsweetened pineapple juice
2 cups seltzer water
1 cup fresh lemon juice
2 tablespoons lime juice
8 lemon slices
8 mint sprigs
Combine the sugar and water in a saucepan and bring the mixture to a boil over moderately high heat, stirring until the sugar is dissolved. Let the mixture cool and add to a large pitcher. Stir in the pineapple juice, seltzer water, lemon juice and lime juice. Pour the mixture into glasses filled with ice cubes and garnish the with the lemon slices and mint sprigs.
