Compared to its relatives in the stone fruit family, the apricot is unique. Apricots have a velvety textured skin and a unique textured flesh that offers the perfect balance of sweet and tart. Over the years the apricot has evolved and new varieties have developed that are sweeter than ever.
Apricots are full of antioxidants, beta-carotene, lycopene and a good source of daily fiber. Apricots are also an excellent source of minerals like calcium, phosphorus, and iron.
Look for apricots with a rich orange color while avoiding those that are pale and yellow. Apricots should be slightly soft, and for the most antioxidants choose fully ripened fruit.
Ingredients
2 cups sliced apricot (about 5 apricots)
4-6 bruised mint leaves
1/2 cup water (add more or less depending on thickness of juice desired)
Honey (or sugar) to taste
Directions
Place the sliced apricots, honey/sugar, mint leaves and chilled water in a blender. Blend together and enjoy a tasty and healthy juice.

Better still, leave out the sugar. Do we really need to sweeten and already sweet drink? If you want to add a sweetener, and I don’t see why, Maybe a tsp of maple syrup or sorghum syrup. Personally, I wouldn’t add a thing though. Apricots have enough sugar and the last thing you want to do is screw with your insulin levels by adding more.
