The peach tree is often considered to be the tree of life, and in China the fruit is a symbol of good luck, protection and longevity. Peaches contain 10 different vitamins and are rich in many vital minerals such as potassium, fluoride, iron and calcium. Plus they are sweet and refreshing.
Ripe peaches should have a golden hue behind their reddish blush; lighter yellow color means a less-ripe peach. Avoid peaches that still have a green-tinge to their color as well as any peaches with wrinkly skin, a sign they have become dehydrated. Most peaches should smell like what you want them to taste like, no smell usually means an under-ripe peach. Peaches should feel heavy for their size. Hold the peach in the palm of your hand and gently squeeze with your whole fingers to gauge how hard or soft the peach is, ripe peaches should have the start of a ‘give’ to them.
Peach Smoothie
Makes 4 servings
Ingredients
2 cups fresh sliced peaches
1/4 cup orange juice concentrate
2 cups milk
6 ice cubes
Directions
Combine all ingredients in a blender, cover and process until smooth. Serve immediately.
